Mom's Bar Cookies 7 Layer Cookies and Chinese Chews

My regular followers may be tired of hearing this, but bear with me for the benefit of my new readers. My mom has a sweet tooth. This is no secret to anyone who knows her. When I was growing up, we always had homemade cakes, pies, and other sweet treats in the house.

For you sweet treat addicts, I have posted links to all of my mom’s great desserts at the end of this hub.  You will find two hubs on layer cakes, one on pound cakes, one on pies, hubs on holiday treats, and more. 

I like doing these recipes in 3s or 4s for some reason. But I also only do recipes that I actually ate and know well. I’ll peruse some of my “church cookbooks” later to spark my memory. For now though, I only have two bar cookies recipes.

7 Layer Cookies

 

 

Are you familiar with the expression “Tastes like more”?  These are probably my absolute favorite bar cookies ever. 

 

Ingredients

½ stick butter

1 c graham crumbs

7 oz can flaked coconut (Mom strongly prefers frozen.) 

6-oz pkg chocolate chips

6 oz-pkg butterscotch chips

1 can sweet condensed milk

1 c chopped pecans

 

Instructions

1- Melt butter in 9 X 13 baking pan.  Mix in graham cracker crumbs.  Spread evenly over bottom of pan. 

2- Layer other ingredients in order above. 

3- Bake at 325º for 30 minutes. 

4- Cool and cut into rectangles.  Not too big.  These are lusciously rich!

Mom bakes these a lot when I was growing up.  They were never my favorite, not that they aren’t good.  I think it’s more a matter that compared to the array of delicious cakes, pies, and other treats that were in the kitchen when I was growing up, these were not exciting.  I clearly recall Mom making these often, but now I wonder if it was because she liked them so much, or if it was just because they are so easy, and she liked having sweets on hand. 

 

Ingredients: 

1 1/3 sticks of butter

2 c light brown sugar

2 c sifted self-rising flour

3 eggs

1 tsp vanilla

1 c chopped pecans

 

Instructions: 

1- Melt butter.  Cream with sugar with electric mixer. 

2- Add flour and eggs and beat with mixer. 

3- Add vanilla and pecans. 

4- Spray 9” X 13” pan with cooking spray.  Bake at 300º for 45 minutes. 

5- Cool and cut into squares or rectangles.

Thanks habee! I'm glad 'recipe week' is over! I managed 22 recipe hubs. My average is usually about 16 hubs a month!
