Fast & Easy Rice Dishes- Simple Recipes for Teens

By

Welcome to my Cooking for Teens series.  The purpose of this series is to provide recipes and ideas for tweens and teens to cook main dish entrees for the family.  My parents worked shift work when I was growing up.  When I was a teenager, it was often my responsibility to cook supper before waking my mom, who was working the night shift.  It was one of the few chores I didn’t mind!

These rice main dishes are prepared with packaged rice and sauce mixes.  The rice does not have to be cooked separately nor drained.  These recipes are slightly more advanced than my Rice Dishes Part I.  Most require prep work with the meats.

If you have a tween or teen who has expressed interest in preparing family meal preparation, hopefully they will find these main dish ideas right up their alley.  Just add a salad or vegetable side dish to these rice and meat main dishes, and dinner’s on!

Knorr Chicken Fried Rice with Diced Chicken

The Asian Sides are fairly new to the Knorr-Lipton line.  We just recently tried this one at our house with some diced chicken.  Quite respectable!

2 envelops of Knorr Chicken Fried Rice Asian Side

3 ½ cups water

2 Tablespoons canola or olive oil

2 eggs

12 oz Tyson Oven Roasted Diced Chicken Breast

Instructions

1- Cover a small pan with foil.  Spread diced chicken in the pan.  Cover with foil.  Heat at 325º for 10 to 15 minutes.

2- Use a medium saucepan with lid.  Pour water and oil into pan.  Bring to a boil.

3- Add contents of packages.  Stir into water.  Reduce heat and cover.  Simmer 6 to 8 minutes, until rice is tender.  Let stand 2 minutes when done.

4- While rice and sauce is simmering, scramble 2 eggs in a skillet with 1 Tablespoon oil.

5- Stir egg and chicken into rice.
